Thanks Grim!

Moosman,

In general, mercury is the element that fish consumer should be most concerned about. If you have a choice, eating smaller individuals of a given species is better than eating larger ones (mercury accumulates in fish flesh over time). Also, eating fish that are lower on the food chain - algae eaters, plant eaters, bug eaters - have considerably lower levels of mercury than piscivores (fish eaters).

Good luck and enjoy eating some of your catch.

I've consumed every species of game fish available in manitoba with the exception of burnout. I know my Asian friends eat burnout and I would too if I knew how to prepare it.
