Shrimp or crayfish Scampi
2 tbsp butter 2 tbsp olive oil, ton of crushed garlic, simmer 5 minutes, then remove the garlic. High heat, stir fry the shrimp. Add garlic back in, squeeze a whole lemon, and add 1/3 cup dry white wine. Reduce a bit, and eat with white baguette and olive oil and balsamic vinegar dip. Excellent with LOTW crays!
