I tried this in Mexico this January and loved it! So naturally I had to try to make it at home. Made it last night and it was almost as good as in Mexico!
It's a super spicy version of ceviche, where the shrimp is "cooked" by the acidity of lime juice.
Above photo is one I found online as I didn't take any pics making this... Just to give you an idea of what you'll end up with.
1 pound of UNCOOKED shrimp.
Juice of 4-5 limes.
1/3 cup of cilantro.
2-4 Serrano Peppers (available at Youngs market on McPhillips otherwise, tough to get your hands on in Winnipeg - Substitute Jalapenos if needed, but really try for Serranos!)
1 tsp salt
1/2 red onion
Tostados or Nacho Chips
Start by juicing the limes. Add lime juice, cilantro, chopped serrano peppers, and 1 tsp of salt to blender. Blend for like 10-15 seconds.
You'll want to butterfly the shrimp so the limes acid cooks them through.
Add shrimp to dish then pour blended mixture over it and let sit in the fridge to cook for 20 minutes.
While doing this, finely slice the red onion in to little slivers. Then cut your cucumber (1/2 a cucumber will do) in half lengthwise so you can spoon out the seeds. Then cut into slices. Toss cucumber in with shrimp/juice mixture.
When you're ready to eat, put in the onions, but don't stir, just leave them on top.
Serve on tostadas or with nacho chips and slices of avocado.
